Green Kitchen Travels + Ribollita

green_kitchen_travels_cov

Our new book has finally been released in the UK and Australia! And already next week it will be available throughout the US. We really hope that you will find it an inspiring and helpful tool in the kitchen and also something beautiful that you want to keep in your home. And who knows, it might even trigger you to save up some money (actually, most of our travels have been done on very low budget) and bring the family or friends on your own travel adventures.

To celebrate the occasion, we have created this book video. We filmed one half of the video in Marrakesh last winter and the rest quite recently with a little baby boy dangling on David’s shoulder while he was filming. So if you find the video shaky, Isac is to blame. Enjoy!

Apart from all the recipes (more than 90 of them), we are also quite fond of the personal stories behind many of the recipes. Just like on this blog, the stories give the recipes extra flavour. You will find insights in our escapades that we haven’t shared on the blog before. Like the time in Sicily when we spent a night in a car to save money after a few too hefty restaurant bills. Or the look on David’s face when we visited a Californian Avocado farm and were told to watch out for the rattle snakes… The chapter about traveling with kids is also not to be missed.

You can order the book within the UK from Waterstones (at the moment they have a £5 discount) or Amazon.co.uk.
In Australia from Booktopia. And in the US from Amazon.com.
Or just pick up a copy from your local book seller.

If you already have received the book and like it, please leave a review on the book sellers site. Thank you!!!

Zuppa_di_ribollita

We are sharing one recipe from the book today. This rustic bread and bean soup sums up all the things I love about the italian way of cooking. Even if many italians themselves are very fashionable, with high heels, sunglasses and expensive clothes, their cooking is the opposite; simple, rustic and down to earth. They don’t need any fancy accessories to cook up the most delicious and beautiful meals. A few good-quality vegetables, fresh herbs and beans are quickly turned into a warm and comforting soup. In Tuscany it is common to add some day-old bread and a few slices of Parmesan to it, but if you are vegan or gluten intolerant they can be left out.

Zuppa di Ribollita

2 tbsp cold-pressed olive oil, plus extra for serving 1 onion, chopped
4 garlic cloves, finely chopped
2 carrots, diced
a pinch of dried chilli flakes
10 sage leaves
a handful flat leaf parsley, leaves picked 1 tomato, diced
1 courgette (zucchini), halved lengthwise and sliced
300 g (101⁄2 oz) cavolo nero green kale or Savoy cabbage
100 g (3/1⁄2 oz/1⁄2 cup) dried cannellini beans, soaked and cooked (or a 400g/14 oz can, drained)
about 1 litre (34 fl oz/4 cups) vegetable stock or water
sea salt and freshly ground pepper, to taste

To Serve
4 slices wholegrain sourdough bread, cubed or torn in pieces
a piece of Parmesan cheese, shaved

Heat the oil in a saucepan. Add the onion, garlic, carrots, chilli and sage and cook over a low heat for 20 minutes until softened but not browned. Add the parsley, tomato and courgette and cook for a couple of minutes. Add the cavolo nero and beans and cover with stock or water. Bring to the boil, reduce the heat and simmer for 30 minutes. Season to taste. The soup should be the consistency of a thick stew with a little broth. Serve in bowls and arrange bread cubes, shaved Parmesan cheese and a drizzle of olive oil over each.

  • Ronja
Hi, my name is Ronja and although my name is originally Swedish, I'm a 17 year old girl from Germany. I am a convinced vegetarian for some time but your Blog (and its a really great one) inspired me to cook more often without animal products at all. I don't think I have just one preferred cuisine but Vietnamese and Italian are at the top of my list. Thanks for so many great recipes so far and for all those of the future. Maybe you could arrange to post some old-fashioned recipe for Kanelbullar ;) (sorry, I don't know how to spell it) Have a good time with your little bundle of joy

  • Hej I'm Angharad from England, and I may be too old for Santa Claus (stupid being 18 making me a adult), but now this book is published im counting down the days till Christmas! Although the chance that I wait that long is about nil. At the moment im loving the Scandinavian simple yet lighter fare (but not the fish) and the east Asian (Japanese, Vietnam, china etc...) basically Scandinavian and NOODLES.

I am from Denmark, Copenhagen.Once travelled to Israel and I loved their kitchen - finally a place where you can go out and order delicious veg based dishes in a normal restaurant.

Hello! I love your blog, stories and recipes! Infact i'm actually making your recipe for fig and walnut spaghetti tonight, as figs have just come into season where I live, France. I have a sweet tooth and would have to say that one of my favourtie treats to eat are anzac biscuits, which are very chewy and delicous and are from my home country Australia. I would love to win a signed copy of book! Lara :) Lyon, France

Hello! I'm Ashley from Boston Massachsetts. My favorite cuisine is definitely anything mexican. Especially guacamole (I could eat it by the spoonful as is, haha) and fajitas. My mouth is watering right now just thinking about it! Congrats on your book! Judging by the recipe you shared today (and in the past) I am sure it is filled with tons of delicious recipes!
  • Hi and congratulations to the book release! I'm from Stockholm, thank you for sharing so many tips from Copenhagen. I visited your city during the summer. I love raw food and baking, lately I have changed all my recipes to gluten free ones, since i was diagnosed with celiac disease a bit over 6 months ago. But italian dishes are also a favourite, as well as the carribean kitchen - so many colours! Thanks for a great, inspiring and good looking blog - keep it up! :) Emeli

The way you guys use products from all around the world is truly inspiring and the moments when reading your blog or skimming through your book, are moments filled with joy! I really appreciate your work, thank you! I am from the south of Germany but am currently staying in Russia and I must say that the russian cuisine surprised me positively. Despite the meat centered, greasy dishes you can find amazingly delicious alternatives.
  • Teresa
Hola, Hallo, Hello! I'm Teresa from Santa Monica, California! I love many cuisines from all over the world but I've done my best to narrow it down to two. I couldn't pick just one! I grew up in Mexico surrounded by a garden full of vegetables and fruits so I will have to pick Mexican food with all its fresh chili and peppers to go along with it. Second - Italian food. It has so much to offer including the Burrata and tomato sauce! Cheers!
  • Kim

Basically, I love fresh foods with strong flavours! Congratulations on your second book, so exciting and it looks beautiful!
  • Jasmin
Hi, I'm from Germany so it's kind of hard getting my hands on the book yet. I lived in Paris for a while, in a wonderful Arrondissement with various ethnic foods and I've loved Couscous, anything including pommegranates and Indian food ever since. Love, Jasmin
  • Lara
I'm Lara from Germany and it is kind of hard to decide on only one favourite cuisine from all over the world, but I guess that I have deeply and hopelessly fallen in love with all sorts of dishes from the Middle East such as Lebanese, Moroccan or dishes from Israel. I am looking forward to receive your signed copy! :) Best wishes, Lara

  • Hello gorgeous Luise, David, Elsa (and of course little Isac), Just to say how much I love your little family, blog, recipes and books! I'm a huge huge huge fan. Always so inspired and touched on so many levels by your stories. Being half French, half Chinese and having grown up all over the world (which is why Green Kitchen Travels resonates so strongly with me), choosing one cuisine is very difficult but if I were to choose one that truly satisfies on all levels it would be Thai/Vietnamese. The fresh ingredients, amazing texture contrasts and fragrant spices always leave me feeling so happy and full of energy!
  • Thea
Hi I'm thea from England. I love reading your blog it fills me with great inspiration and also makes me very hungry. If I had to pick a favourite cuisine it would have to be Moroccan, although you can't beat anything asian with plenty of chillie!!
  • Yoojin
I'm Yoojin, and am from the United States, currently located in Pittsburgh! However, I'm Korean and was born in Seoul, so my heart resides there in terms of favorite cuisine. Gotta have my kimchi, always :)
  • jacquie
hi - i'm jacquie currently in maryland and from the finger lakes region of NY originally. I don't really have a favorite cuisine currently but rather favoring food that is fresh and simply seasoned.
  • Michelle
Hello, I'm Michelle. I'm from Boston but currently living in the LA area for school. I love trying new foods but I always go back to Indian, I can eat it any night of the week!
  • Julia
Hi, my name ist Julia. I'm from Hamburg, this wonderful city in northern Germany. Since my travels through south India I love the South Indian Cuisine. But I love also the French Kitchen. And the Italian. And the Greek: I can't really decide, I just love good food. :)
  • Rowena
Hello! My name is Rowena and I'm from Hove on the south coast of England - I just discovered you guys and your work recently and was instantly hooked! I was always told by my Mum that 'variety is the spice of life' - I great mantra but one which makes it tricky to pick just one cuisine here... I love veg and healthy fats, so it would have to be Scandi and/or Mediterranean, which are rich in both! Thanks for all the inspirational recipes and instagram posts - I'm loving it.
  • Jyotsna
Hello! Congratulations on your new book!! Love your recipes and love Little Elsa:-) Being in India, my favourite cuisine is obviously "Indian", but I also crave Chinese and Italian food at times!!:-P Jyotsna from Chennai, India
  • Tori
I live in Connecticut, USA. My favorite cuisine is Mexican, although I have a love-hate relationship with it. I love the spicy, but complex flavors. I love the beans, the fresh veggies, the corn and avocado. But, and it's a big but, I hate cilantro! And Mexicans put a lot of cilantro in their food. So most of the time, I make it at home, so I can omit the cilantro. My favorite dish is tostadas!
  • Saniel
I live in Atlanta, GA and my favourite cuisine is Indian north and south. Vegetable samosa all day. Thank you.
