Green Kitchen Travels + Ribollita

green_kitchen_travels_cov

Our new book has finally been released in the UK and Australia! And already next week it will be available throughout the US. We really hope that you will find it an inspiring and helpful tool in the kitchen and also something beautiful that you want to keep in your home. And who knows, it might even trigger you to save up some money (actually, most of our travels have been done on very low budget) and bring the family or friends on your own travel adventures.

To celebrate the occasion, we have created this book video. We filmed one half of the video in Marrakesh last winter and the rest quite recently with a little baby boy dangling on David’s shoulder while he was filming. So if you find the video shaky, Isac is to blame. Enjoy!

Apart from all the recipes (more than 90 of them), we are also quite fond of the personal stories behind many of the recipes. Just like on this blog, the stories give the recipes extra flavour. You will find insights in our escapades that we haven’t shared on the blog before. Like the time in Sicily when we spent a night in a car to save money after a few too hefty restaurant bills. Or the look on David’s face when we visited a Californian Avocado farm and were told to watch out for the rattle snakes… The chapter about traveling with kids is also not to be missed.

You can order the book within the UK from Waterstones (at the moment they have a £5 discount) or Amazon.co.uk.
In Australia from Booktopia. And in the US from Amazon.com.
Or just pick up a copy from your local book seller.

If you already have received the book and like it, please leave a review on the book sellers site. Thank you!!!

Zuppa_di_ribollita

We are sharing one recipe from the book today. This rustic bread and bean soup sums up all the things I love about the italian way of cooking. Even if many italians themselves are very fashionable, with high heels, sunglasses and expensive clothes, their cooking is the opposite; simple, rustic and down to earth. They don’t need any fancy accessories to cook up the most delicious and beautiful meals. A few good-quality vegetables, fresh herbs and beans are quickly turned into a warm and comforting soup. In Tuscany it is common to add some day-old bread and a few slices of Parmesan to it, but if you are vegan or gluten intolerant they can be left out.

Zuppa di Ribollita

2 tbsp cold-pressed olive oil, plus extra for serving 1 onion, chopped
4 garlic cloves, finely chopped
2 carrots, diced
a pinch of dried chilli flakes
10 sage leaves
a handful flat leaf parsley, leaves picked 1 tomato, diced
1 courgette (zucchini), halved lengthwise and sliced
300 g (101⁄2 oz) cavolo nero green kale or Savoy cabbage
100 g (3/1⁄2 oz/1⁄2 cup) dried cannellini beans, soaked and cooked (or a 400g/14 oz can, drained)
about 1 litre (34 fl oz/4 cups) vegetable stock or water
sea salt and freshly ground pepper, to taste

To Serve
4 slices wholegrain sourdough bread, cubed or torn in pieces
a piece of Parmesan cheese, shaved

Heat the oil in a saucepan. Add the onion, garlic, carrots, chilli and sage and cook over a low heat for 20 minutes until softened but not browned. Add the parsley, tomato and courgette and cook for a couple of minutes. Add the cavolo nero and beans and cover with stock or water. Bring to the boil, reduce the heat and simmer for 30 minutes. Season to taste. The soup should be the consistency of a thick stew with a little broth. Serve in bowls and arrange bread cubes, shaved Parmesan cheese and a drizzle of olive oil over each.

Congratulation on the book - it looks stunning! I am sure I will be getting it soon, just like your first one. Myself, I am from Holland and my favourite cuisine is probably Greek. While I am partial to a lot of other cuisines as well this one just reminds me of all the summers I spend their with my family as a child!

My name is Sarah and I live in Australia. I am so looking forward to being able to buy a copy of your book! I love the first one. It is so hard for me to choose my favourite cuisine... But I think I am going to say Thai. I just LOVE the fresh, tangy flavours that Thai curries and stirfrys involve! Delicious.I also LOVE Mexican for the same reason - usually such healthy, fresh tasty ingredients and so easy to make it vegetarian!
  • Sigrid

Hello, my name is Sarah. I am from Australia! I cannot wait to get my hands on your new book! The combination of travel+food.. my two loves! So so excited! It is however very hard to choose my favouite cuisine from around the world! We are so lucky in Australia to have so many high quiality restaurants/cafes that make the many cultures and cuisines of the world accessible! In my community alone we have a very high vietnamese, indian and african community.. and of course much of their delicious food! I love herbs and spices and a splash of citrus. The combination of sweet, savoury, fresh and abit of tang! For this reason middle eastern, vietnamese and mexican are right up my alley! BUT REALLY.. what a hard question for food lovers!!

  • The new book looks exquisite, such beautiful photos! My favourite cuisine, it's a tough one, but I'm going to say Thai, travelling Thailand was just the funnest most delicious experience.
  • Jan Scholl

Can't wait to get the new cookbook. I live in Oregon - usa. We love middle eastern and latin american food.
  • I'm from London and I've yet to make a recipe from your blog or first book that isn't utterly delicious. I've even fed your food to hardened carnivores who can't believe how tasty it is so I'm very much looking forward to your Green Kitchen Travels. It's quite hard for me to give a single favourite cuisine, as what I cook depends so much on my mood and the season and so much of the food from around the world is really yummy! That said, recently I've been enjoying the flavours and mezze style eating of the Levant, which lends itself so well to healthy vegetarianism.
  • Lars
Hello, my name is Lars and I live in Germany. I like lots of diffent kinds of cuisines, right now my favorite is Indonesian, especially everything with tempeh.
  • Anne
Hi! Congratulations for the book! You are a beautiful inspiration. I'm from Switzerland and I love Indian and Italian cuisine above all :-) Sending you some sun rays from an Indian summer in the country of chocolate.
  • Mitte
Love you blog and the previous cookbook. I'm from Denmark and the best food I had traveling was on the small french island La Reunion. The markets there where full of really fresh fruits and vegetables so big compared to the small ones we have here in the supermarkets. Thought the avocados where melons at first :-) They served avocado with a dash of honey for breakfast along with homemade vanilla yoghurt. The vanilla pods are grown on the island and on the markets you can buy a bundle with 75 big greasy pods for the prize of 2 really good ones in Denmark. They will vacuum pack them for you at the market so you can bring them back home. They use the vanilla in everything from desserts to the savory kitchen - like vanilla duck. Hope to win the signed copy of your book.
