Bean Chili with Walnuts & Chocolate

Friday night. Elsa is sleeping. Finally time to write that post we prepared earlier this week. I’ve been looking forward to share this recipe, as I am pretty certain that many of you will like it. This bean chili (or chili sin carne, as David calls it) is not only warm, comforting and spicy. It also has the most wonderful flavor from dark chocolate, coffee, red wine and crunchy walnuts. I seriously can’t think of a more perfect recipe to embrace autumn with.

I am dedicating this recipe to my brand new bike. Or to be more exact, to my brand new bike that got stolen three days ago. Aaaargh!!! I got to play with you for exactly 28 days. Thanks a lot.

And while I am on that subject. Let me tell you a short story about something stupid (but actually quite funny, a few days later): Remember that we were going to attend a wedding in Copenhagen. We had bought a really nice juice machine as a wedding gift. Elsa and I travelled ahead, so David was supposed to bring it with him when he flew down from Stockholm. He is a pretty distracted guy, so I emailed, called and texted him to make sure he wouldn’t forget it. As he arrived in Denmark he had actually remembered it! We met up at this restaurant (which was good, btw), and – my oh my – he also remembered to bring it with him as we left from there. When we arrived at the apartment he still carried the juice machine with him. I was wildly impressed by how he had been carrying a rather big and heavy juice machine with him that whole day. At the day of the wedding I asked him where he had put the wedding gift. He looked at me. Then looked around the apartment. Then looked at me again. “Damn, I left it on the street outside our door” …

Bean Chili with Walnuts & Chocolate
Serves 6-8

2 tbsp extra virgin olive oil, ghee or coconut oil
1 large yellow onion, peeled and finely chopped
2 cloves garlic, peeled and finely chopped
2 tsp cumin seeds
1  fresh chili, minced (more if you like it spicy)
1 tsp ground paprika
1 tsp dried oregano
2 bell pepper, red & yellow, finely chopped
1 carrot, finely chopped
1 parsnip, peeled and finely chopped
2 large stalks of celery with top greens, finely chopped
1 1/2 cup (150 g) raw walnuts, very finely chopped
5 cups (800 g) cooked mixed beans (adzuki, kidney, black eye, borlotti)
2 x 400 g cans whole plum tomatoes
1 cup (240 ml) water
2 tsp salt
1/2 cup (120 ml) red wine or balsamic vinegar
1/2 cup coffee (optional)
2 ounces (60 g) 80% dark chocolate, broken in pieces

For serving
1 bunch of fresh cilantro, coarsely chopped
1/2 cup (120 ml) plain yogurt
1 lime, quartered
4 corn tortillas, toasted

Start by preparing all vegetables. Heat oil in a large thick-bottomed saucepan or dutch oven. Add onion, garlic, cumin, chili, paprika and oregano, and let fry for a couple of minutes, stirring occasionally, until the spices smells fragrant. Be careful so they don’t burn. Add bell pepper, carrot, parsnip and celery, let cook for another couple of minutes. Add walnuts, beans, tomatoes, water and salt and let cook for 30 minutes more. Now add red wine, coffee and chocolate, stir around carefully and let cook for 5 more minutes. Taste and season with sea salt and freshly ground pepper. Serve in bowls with a dollop of yogurt, fresh cilantro, lime and toasted corn tortilla.

    If I'm using ground chicken instead of beef, and have a nut allergy would all the flavours still work with the chicken?

    Wow such great flavours, just loved this recipe! I did an alternate version of the recipe without the chocolate & coffee. Added fresh corn, 1/2 tsp of grounded coriander and some tomato paste to get the sauce a little thicker. I served it with fresh coriander, avocado on top and lime, it was pure bliss! Thanks for sharing this one, will definitely put it in my favorites :)

    I tried this recipe today for the dinner. I just didn´t use carrot and wine and replaced nuts with sweet corn. The taste is really specific but I am kinda falling in love with it! Thank you for such an amazing recipe :)

    Hey, I'm preparing this meal for my birthday dinner (tomorrow) and was wondering if it will be just as good if you cook it the day before and put it in the fridge overnight? I'm a little afraid that the beans will get too soft in texture if you boil it twice. Have you tried? Love your website and book!

    Saw this chilli and had to make it. The flavours of coffee, wine and dark chocolate made me do it!I am a HUGE chilli fan yet my husband is not. I have a tried and true recipe from my sister that I have been using for years which he finds to be overwhelming. This chilli had the perfect balance of fresh crunchy veg and yummy spices. Was doubtful halfway through the process, but when the chocolate, coffee and wine were added all the flavours richen and come together. Served it with home made corn muffins topped with honey butter and coleslaw. The lime and corriander bring this dish close to perfection. Thanks for a chilli recipe we both enjoy! P.S. The bike thing sucks!

    Hi there, The recipes from your blog I have tries so far have been great, so I had faith in this one too. However, I must say my boyfriend and I really did not like it! I'm sorry, maybe it's just not our kind of flavour, but I thought it might be worthwhile to post this. The chocolate (I used 73%) made it just a bit..well, odd I suppose, not sweet the taste lingered a bit too much. The bits of walnut that had been simmering away were quite bitter, too. The whole combination did not really work for us, even though neither of us are very picky eaters at all (and I'm pretty sure I followed the recipe correctly, I'm quite the hobby-cook). Just thought I'd mention this, in case readers are wondering if anyone has tried to make the dish and how it turned out, because all I see is comments from people who just say it sounds good. I really like your site and will continue to try your recipes for sure, because this is only the first miss after quite some successes!

    This is a truly delicious chili! I didn't get parsnip, though, and added a cup of sweet corn. As I was in a bit of a hurry the walnuts remained a bit chunky, but I think I'll have them chunky for the next time, too. ;-) Thanks for this wonderful recipe! Regards, Regina

    hi, i just tried this out, but i replaced the celery with pumpkin ( there was no celery in reasonable portion to be found at the supermarket, but they sold small pumpkin slices) .. I really loved this dish, i actually had enough for a few more days and didnt get tired of it really .. really loved loved loved it!!!!!

    We made this tonight for our evening meal- and it was more than worth the time it took to chop and prepare all the veggies! We substituted out the parsnip [ not so easy to find in Austria at this time of year] for some radishes and courgette. This was the most fun I've had preparing a big veggie dish in ages, and it contains my three favourite things: dark chocolate, red wine, and coffee. The walnuts add a nice earthy touch.
